Spinach, Onion & Swiss Quiche |
I baked a quiche for a friend's birthday and it turned out so incredibly delicious I thought I'd share it. It was supposed to also have canadian bacon but my hubby ate that the night before. This quiche can be changed to include bacon, ham, roasted garden veggies or any combination imaginable. I used half and half instead of heavy cream to lighten it a little and it worked out great!
Ingredients:
1 Refrigerated pie crust, fitted to a 9-in pie plate
6 large eggs, beaten
1 1/2 cups half & half
Salt & Pepper
2 cups chopped fresh baby spinach
1 1/2 cups shredded Swiss cheese
1/2 cup chopped onion, sauteed in butter until translucent.
Directions:
Preheat oven to 375 degrees.
Combine eggs, half & half, salt and pepper in large bowl.
Layer spinach,onion, and cheese in the bottom of pie crust, then pour the egg mixture on top.
Bake for 35 to 45 minutes until eggs are set.
