THE TIME OF MY LIFE (cue that song from Dirty Dancing)

We traveled this weekend to Houston to Lakewood church to see Pastor J. Prince teach the Word of God for the first time in the U.S.  It was literally a dream come true since he lives in Singapore and also a dream come true because of the IMMENSE impact of his teaching on my life. He has been instrumental in teaching me the Word and shares the gospel as Apostle Paul did.  He teaches from the Word, so many references, yet doesn't require notes-He's studied up!  What a miracle to see my favorite pastor from Singapore! It was phenomenal!  The place was full-around 15,000 people. We met people from around the country as far as New York City and someone as far as Canada.  It was encouraging to hear everyone we met testify to that ministry impacting them as it has me and awesome to see and hear 15,000 people worship our God.  Absolutely the time of my life- I can't wait for heaven!

Chili Supper

This photo simply doesn't do this chili justice.  It's tasty, is also great to serve as chili baked potatoes or fritos chili pie, makes a large quantity so use your largest stock pot, and it freezes wonderfully.  It's full of healthy fiber rich beans, and is delicious as turkey chili and best of all- easy to make.

Amanda's Chili

1/2 lb to 1 lb ground beef or turkey
30 oz tomato sauce
 30 oz kidney beans (with liquid)
30 oz pinto beans (with liquid)
15 oz black beans-optional (rinsed & drained)
1/2-1 cup chopped onion
1 can Rotel
14.5 oz can diced tomatoes
 2 cup Water
2 teaspoon Cumin
3 tablespoons Chili Powder
1 1/2 teaspoon Pepper
2 teaspoon Salt
Brown meat, add onion; simmer 3-5 minutes in large stock pot.  Add remaining ingredients, stir and simmer for 2 hours.

Our trip to Branson

We were able to spend a couple days in Branson. The first night we stayed at the peaceful Omaha house where we just unplugged and actually made Lainey a tu-tu (lol). Then, we went to Silver Dollar City's Harvest Festival, which was fun. We saw great pumpkin carvers, wood workers, pottery and soap. Steven rode Wildfire, twice. We spent a night at the Chateau on the Lake. It was a beautiful hotel. It's more of a destination than simply a hotel. We walked their nature trail, caught part of a movie in their theater, sat on their many decks to enjoy hot chocolate and breakfast. It was a great trip.

What we've been up to...


Steven had surgery on both of his legs- hopefully taking care of his leg pain. He has been off work for the past six weeks and I've enjoyed having him at home. We had the property cleaned up- bush hog work and dead trees removed. Then, we had a pond dug out. All we need now is RAIN!
